New York Strip SteakThere are lots of cuts of meat that might come across your plate at a restaurant or when you are out grocery shopping for a great piece of meat to grill, but the New York Strip Steak is one of the most popular cuts of meat. This tender, juicy, lean cut of meat is perfect for a barbeque, a fabulous selection at a five star restaurant or even an every-day dinner to prepare at home on your range top. It is also called the porterhouse steak in Australia and the Kansas City strip, but no matter what you want to call it, it remains one of the most popular cuts of meat.

The best strip steak contains two parts of the beef muscle, both the top loin and the flavorful tenderloin. A top loin steak is also a great way to cook roast beef. The French are more precise with their meat cuts and will call a choice pick of meat a chateaubriand, but American butchers call many top flank steaks by this name. A New York Strip Steak is considered primarily a top-cut piece of meat.

Since the New York Strip Steak is notably a highly juicy and flavorful cut of meat, it doesn’t take much to cook it to perfection. Start by choosing a USDA prime cut piece of meat and make sure it says so on the package. Lesser meats don’t receive this seal of approval. Also look for grain-fed and free range beef as this will enhance the quality of the meat even more. You want a thick piece of meat to make sure it doesn’t dry out when you cook it – so aim for at least a one and a half inch piece.

Try to cook a meat that has been given time to thaw to an even room temperature, so it cooks evenly. If it was frozen, let it defrost completely, to a cool temperature. If it is straight out of your refrigerator, let it set out for about an hour so the meat has the same temperature throughout the cut before grilling it. Place it in a pan after seasoning both sides with a simple salt and pepper mixture, or other spices for a more exotic taste. A great cut of meat will need hardly any seasoning though. You can try dry rubs or marinades, but they are hardly needed for this juicy cut of meat, New York Strip Steak.
